Each class is structured around a
handful of delightful recipes and offers practical solutions for
putting healthy cooking into effect. You will learn how ingredients
and portions look when using healthy cooking guidelines. You will also
discover how clever use of herbs, spices and other flavours can give
you an endless repertoire of delicious dishes.

Planning and Organizing a Productive
Food Garden
One of the advantages of the
Go Food Gardening approach is that it offers you a comprehensive
system to plan, organize and execute all your food gardening
activities. This is done with the help of the Go Food Gardening
Activity Cycles Flowchart.
Another advantage of the Go Food
Gardening approach is that it lets you start small and build your
skills as a food gardener over time. This means that you can tailor
the activities to suit your skill level, and your resources.
The first two cycles, which are often
neglected by beginners, are mostly paper activities. These cycles are
normally completed during autumn and winter in preparation for the
growing season which starts in spring, but they can
be done whenever it suits the gardener.
Planning forms the foundation of
your food garden and are therefore critical to the success and
sustainability of your food garden.
In this interactive class we guide you
through each of the fifteen activities that comprises the first two
cycles on the activity flowchart. Apart from your class manual and the
activity flowchart we'll also share some planning tools, lists,
schedules, tables and
background information that will enable you to plan, organize and run
the productive food garden of your dreams.

Bed Preparation
and Plant Propagation
With the planning of the food
garden done the preparation of the beds can begin in all earnest. We
start this hands-on class, which is the perfect companion to the
previous class, with a short lecture on soils. Then we begin the
practical part with d-i-y home tests to determine your soil health and
soil type. The results of these tests are then used to determine how
to improve your soil using the Go Food Gardening soil amendment
formulas. Proper bed preparation can be hard work at first but once it
is done, restoring a bed for planting is easy. We show you exactly how
to do both to improve your soil health and grow better quality crops.
The remainder of the class is devoted
to the all-important planting cycle. This includes a practical session
on how to sow a variety of crops in containers and in beds, how to
thin out seedlings, how to transplant container grown seedlings and
plants into beds and how to grow perennials from cuttings.

Organic Pest and Disease Management
It’s been proven beyond doubt
that healthy plants, like healthy humans and animals, can withstand
just about any attack from pests and diseases. In this popular class,
we discuss the growing cycle and how you can use these everyday
activities to help improve the health of your crops and stress pests.
Next we focus and how to prevent and
control a variety of common food garden pests and diseases with an
integrated pest management approach. We also share a selection of
proven recipes for perfectly safe homemade sprays that will not harm
you or destroy the biodiversity in your garden.

Building a Healthy Soil
In Go Food Gardening
the goal changes from growing crops for the sole purpose of
consumption to one of giving and creating life – producing, in the
process, an abundance of food. A critical activity in reaching this
goal is building the micro-biodiversity of your soil with the addition
of prime quality compost.
Sadly, commercially available
compost is not a viable option for the organic food gardener.
Apart from its low quality and high cost it can also be
detrimental to your crops and soil-biodiversity. The only
viable alternative for growing an abundance of food and
growing your soil is making your own compost. Fortunately this
is easier than most people think and there are options
available to suit just about every budget and personality.
In this class you’ll learn how to
maximize the quality and quantity of your own cured compost,
irrespective of the size of your garden. You’ll discover
(step-by-step) how to setup, manage, and integrate a variety of
home-scale composting systems and materials including bokashi buckets,
worm farms, bins, compost heaps, animal manures and green manures.
We’ll also help you choose a method, or combination of methods, that
will work best for you; and we’ll show you how to make compost teas
from your own cured compost.
